Buildings related to agri-food chains offer an interesting prism to assess the relative success of technocentric and ecocentric approaches to sustainable agriculture (Robinson, 2009) in French rural areas. The presentation builds on a PhD research in the region of Occitanie (South of France): 26 in-depth interviews were conducted with project officers (Parks, CAUE, Chamber of Agriculture), architects and researchers. Interviews were registered, transcribed and analysed to understand the current dynamics of buildings related to agri-food chains at the territory scale. Results were mapped to identify territorial patterns. The results show that the dynamics of renewal of agri-food buildings are underpinned by both globalization and territorialization processes. Globalization favors a technocentric viewpoint. To respond to the challenges of climate change, large photovoltaic and methanization farm buildings are currently being built in the valleys and in the major production basins. They produce renewable energy, transform the landscape and the economic models of the farms. This dynamic is an extension of the industrialization of food systems, which has led to an increasing specification and standardization of buildings, driven by the need for lower cost equipment (Cividino, 2019). In parallel, the territorialization of food systems favors a more ecocentric viewpoint. This dynamic represents a minority and is essentially carried out by proximity food chains (Praly and al., 2014), in territories with particular environmental or heritage issues (parks, mountains). The constructive solutions are very diversified (frugal and ecoconstruction, mutualization, rehabilitation...). The study of these building dynamics illustrates the variety of transition patterns towards more sustainable food systems in the territories, showing the emergence/renewal of proximity food chains (market gardening, poultry...) and the reappropriation of the links of the food chain at the local scale.
